The first Coon Chicken Inn Restaurant was opened in 1925 in Salt Lake City, a second location was opened in 1929 in Lake City near Seattle Washington, a third location was opened in 1931 in Portland Oregon.

The restaurant chain was popular in their day. The name, trademarks, and entrances of the restaurants were designed to look like a smiling blackface caricature of an African-American porter. The smiling capped porter head also appeared on menus, dishes, and promotional items.
