Black labor in American kitchens, though a very common historic circumstance, is a notoriously difficult subject in antique images. Often these men or women are seen as part of a kitchen in motion, not as sitters or intentional subjects. Though unidentified, our subject here represents many.

Commanding w/ crossed knives and dress white chef's coat - he stares down that camera. Rare intentional portrait in any case, but very possibly (given the boots & uniform) that we are looking at a WWI military cook.
